The Super Smart Almond Biscuit Bar

Recipe created by the Curious Confectioner: This snack recipe is the perfect mix of Florentine and granola bar with a rich, almond-meal shortbread biscuit base. With high fiber and protein content, his super smart, indulgent snack bar is designed to keep you feeling fuller for longer.

Ingredients
Almond Shortbread Biscuit Base
  • 160g Ground Almonds
  • 160g Butter
  • 100g Golden caster sugar
  • 150g Plain flour
Caramel
  • 80g Almond butter
  • 40g Butter
  • 80g Honey
  • 60g Light Brown sugar
  • 50g Double Cream
Dry Ingredients
  • 100g Whole Almonds
  • 100g Flaked/sliced Almonds
  • 30g Sunflower seeds
  • 30g Barley Flakes
  • 30g Rye Flakes
  • 30g Quinoa Flakes
  • 20g Candied Orange Peel (roughly chopped)
Preparation
  1. Pre-heat the oven to 160°C and grease a 8” x 12” baking tin lined with parchment paper
  2. In an upright mixer combine the golden caster sugar and butter until light and fluffy
  3. Add the ground almonds and plain flour mixing until well combined
  4. Turn out the shortbread mix into the greased pan. Pack down and compress evenly before baking in the pre heated oven for 15 mins and lightly golden in colour
  5. Once baked remove from the oven and allow to cool in the tin until firm (approx. 30 mins)
  6. Melt all of the caramel ingredients (apart from the Almond butter and regular butter) in a pan over a medium heat whilst stirring to combine
  7. Turn up the heat and bring the caramel to 120°C (Be careful of hot caramel and measure temperature using a suitable Candy thermometer)
  8. Combine the smooth caramel with the dry ingredients before turning on top of the pre-cooked shortbread still in its tin. Pack down and smooth the surface before returning to the oven for another 15 mins
  9. Once cooked allow to cool completely before removing from the pan and cutting biscuits to size
