Ramen Crunch Almonds Snack Mix

Difficulty
Hard
- Heat honey, butter and sriracha in a non-stick saucepan; bring to a boil (without stirring), then simmer 2 minutes.
- Add tamari almonds and gently stir to combine; then simmer 2 minutes, stirring occasionally.
- Add dried parsley flakes and dulse flakes to almonds, then simmer additional 1 minute; stirring until the almonds have absorbed the honey mixture and are fully glazed/coated.
- Immediately place glazed/coated almonds on a parchment lined sheet pan, separate and cool for approximately 1 minute (but not harden, as remaining seasonings will not adhere).
- Add warm glazed almonds to a mixing bowl. Immediately add umami powder & blanched almond flour, then quickly toss (with gloved hands) to evenly combine and lightly coat each almond.
- Spread the coated ramen almonds out, back on the parchment lined sheet pan; then allow the almonds to cool at room temperature and harden for approximately 5 minutes.
- To finish the snack mix - place the ramen almonds, dehydrated veggie sticks (green bean, carrot, taro, squash, multiple sweet potatoes) & dried ramen noodles in a sealed container - and store at room temperature.
