Almond Yuzu Poppy Seed Bar

This baked snack bar features three almond forms – almond protein powder, almond butter and sliced natural almonds – combined with yuzu, diced lemon peel and poppy seeds for a delicate citrus flavor.

  • Butter, unsalted, softened 9 oz
  • Almond butter, creamy 13.5 oz
  • Brown sugar, light 18 oz
  • Vanilla extract, pure 0.67 oz
  • Yuzu juice 1.12 fl oz
  • Lemon juice 1.12 fl oz
  • Eggs, whole, large 9 oz
  • Almond Protein Powder, blanched 15.75 oz
  • Baking powder 0.45 oz
  • Poppy seeds 0.45 oz
  • Glazed lemon peel, diced 9 oz
  • Natural almonds, sliced 18 oz
Preparation
  1. Place softened butter, almond butter and brown sugar in a mixer, fitted with a paddle attachment. Lightly beat just until smooth.
  2. Add the vanilla extract, yuzu juice, lemon juice and the whole eggs, adding 1 cracked egg at a time, while slowly beating the mixture just until combined.
  3. Add the almond protein powder, baking powder, poppy seeds and diced glazed lemon peel and lightly beat just until combined.
  4. Remove soft dough/mixture from mixer. Add sliced almonds and incorporate into the dough by hand, just until combined to keep more of the sliced almonds intact vs. small pieces.
  5. Evenly spread the soft dough/mixture into a 1/2 sheet pan fitted with parchment paper. Gently pat down on the dough to smoothly fit throughout the pan.
  6. Bake in a 300 F convection oven for approximately 15 minutes or until the bars have an even golden color (edges may be slightly darker) with visible white flecks of almonds and poppy seeds, along with a slightly cracked top crust.
  7. Remove from oven and allow to completely cool, at room temperature.
  8. Portion into 54 servings (9 W x 6 L) of snack bars.
  9. Place Almond Yuzu Poppy Seed Bars in a sealed container and store at room temperature or refrigerator.
