Serves: 22.6g
  • 24g (5.32%) Defatted Almond Flour
  • 134g (30.36%) Tapioca Flour
  • 78g (17.72%) Sugar
  • 109g (24.81%) Water
  • 3g (.53%) Salt
  • 94g (21.27%) Tapioca Flour (reserved)
Preparation
  1. Bring Water to a boil.
  2. In a mixing bowl, combine Tapioca Flour, Sugar, and Defatted Almond Flour. Mix to combine.
  3. Pour boiling water over the dry mixture, and stir until thickened.
  4. Roll mixture into tubes and cut into desired pearl size, dust with reserved Tapioca flour as needed.
  5. Boil pearls until tender and shock in ice water, reserve until needed.
