Ingredients

Spraying
  • Red cocoa butter color
  • Black cocoa butter color
Molding
  • Vegan milk chocolate
Horchata Ganache
  • Brown rice 100g
  • Blanched almonds 100g
  • Almond milk 650g
  • Infusion 280g
  • Glucose syrup 32g
  • Vegan milk chocolate 46% 430g
  • Coconut powder 5g
  • Cinnamon powder 0.8g
  • Ground cloves 0.4g
Almond Gianduja
  • Almond praline 50% 338g
  • Dark chocolate 66% 68g
  • Cocoa butter 27g
  • Rice krispies 68g
Preparation
Spraying
  1. After polishing the molds, spray the center of the mold with red cocoa butter. Finish spraying the rest of the mold with black cocoa butter.
Molding
  1. Temper 46% vegan milk chocolate. Brush an initial layer of the mold with milk chocolate, then finish molding.
Horchata Ganache
  1. Toast brown rice and blanched almonds at 350F for 30 minutes. Pour into hot almond milk and infuse for 3 hours. Then, hand blend this mixture and strain. Scale 280g of the remaining liquid and add glucose syrup and bring to a boil. Pour over slowly this boiling mixture into the melted chocolate and start stirring in the center with a rubber spatula to create an emulsion. When the ganache reaches 35C, add the butter and spices and process with a hand blender. Transfer into a piping bag.
Almond Gianduja
  1. Melt dark chocolate and cocoa butter and combine with almond praline. Cool down to 22C and fold in the crushed rice krispies.
Assembly and Finishing
  1. Pipe the horchata ganache into the milk chocolate shells and leave a little space, about 3mm. Let the ganache crystallize for 12 hours at 65C. Pipe the next layer, the almond gianduja layer and scrape the excess with a chocolate metal scraper. Once this last layer has crystallized, seal all the molds with tempered milk chocolate. Let the chocolates crystallize at 65C and unmold the chocolate when the cocoa butter has released from the molds. Apply gold leaf on top of the chocolate.
