Vegan Toffee with Dark Chocolate & Almonds

Ingredients
Serves: Makes one 10x7 inch / 25 x 18 cm sheet (approx 15 chunks)
  • 1 Cup / 140 grams Roasted Almonds Chopped
  • 1 Cup / 227 grams Vegan Butter
  • 1 Cup / 201 grams Brown or White Sugar
  • 1 Tsp / 5 ml Vanilla Extract
  • Pinch of Sea Salt
  • 6 oz / 170 grams Compartes Vegan Soy Free Dairy Free Dark Chocolate PURE Chocolate Bar or any Dairy Free Chocolate Bar (chopped bars)

Preparation
  1. Prepare and have all the ingredients ready. Prepare a baking tray lined with parchment paper.
  2. Combine the vegan butter, sugar, vanilla extract and salt in a saucepan. Heat the mixture on medium heat, constantly stirring.
  3. Once the mixture has reached a temperature of 290ºF, turn off the heat and immediately pour the mixture onto the baking tray lined with parchment paper. Make sure the caramel mixture is spread out evenly on the tray.
  4. Let the caramel cool for about 30 seconds before evenly sprinkling over the chocolate. Once the chocolate is melted (this will take 1-3 minutes), evenly spread it using a spoon or spatula.
  5. Immediately sprinkle the chopped almonds and press into the chocolate.
  6. Let the toffee cool completely before breaking into pieces.
  7. Store in the refrigerator in a tightly sealed container.
