Vegan Almond Butter Goji Energy Balls

Ingredients
Serves: Makes Approx 28 Energy Balls
For the Filling
  • 1/2 Cup / 120 grams Almond Butter
  • 4 Tbsp / 60 ml Almond Milk
  • 1 1/2 Cups / 135 grams Oats
  • 3/4 Cup / 84 grams Dried Goji Berries
  • 4 Tbsp / 60 ml Maple Syrup
For the Coating
  • 6 oz / 170 grams Compartes Vegan Soy Free Dairy Free Dark Chocolate PURE Chocolate Bar or any Dairy Free Chocolate Bar (chopped bars)
  • 1 Cup / 70 grams Puffed Quinoa
Preparation
  1. Combine all filling ingredients in a food processor until well combined and it sticks together when shaped with your hands.
  2. Shape filling into approximately ¾ in / 2 cm evenly sized balls. Refrigerate.
  3. Prepare a double boil and add the dark chocolate to the double boiler.
  4. Prepare a medium size bowl with about half the puffed quinoa.
  5. When chocolate has fully melted, using a fork or dipping utensil, dip each ball lightly into the chocolate. Allow excess chocolate to drip off.
  6. Drop the ball into the bowl of quinoa and lightly toss the ball by carefully shaking the bowl until the chocolate has been fully coated by the quinoa.
  7. Place the ball onto a tray lined with parchment paper.
  8. Repeat for all the remaining balls, adding the remaining quinoa to the bowl as needed.
  9. Refrigerate for about 10 mins or until chocolate has set. Store in the refrigerator in a tightly sealed container.
