Almond Quinoa Power Bowl

Ingredients
Serves: 3
  • 1 cup uncooked quinoa
  • 1/4 cup dried unsweetened cranberries
  • 1/4 cup sliced almonds
  • 1/8 cup fresh basil
  • 1 tablespoon avocado oil
  • 1/4 teaspoon sea salt
  • 1 teaspoon lime juice
Preparation
  1. Rinse quinoa well using a strainer under running water before cooking.
  2. In a medium sized pot, add 1 cup quinoa and 2 cups water and bring to a boil over medium-high heat, then cover and decrease to a gentle simmer.
  3. Cook until the quinoa has absorbed all the water (approximately 10-15 minutes). Remove from heat and let stand for 5 minutes.
  4. Add quinoa with all remaining ingredients to a medium sized mixing bowl and gently fluff with a fork until everything is well incorporated.
  5. Garnish with additional basil leaves and enjoy!
